b. Virgin Olive Oil- It has a maximum acidity of 2%.

c. Ordinary Virgin Olive Oil- It has a maximum acidity of 3%.

d. Lampante Virgin Olive Oil- With an acidity of more than 3.3%, it is not fit for human consumption. It needs to get refined before being used in foods.

Refined Olive Oil- It is obtained by refining methods from virgin olive oils (Mostly Lampante) without the change in the glyceride structure of the olive oil.

Olive Oil- It is a blend of refined olive oil and virgin olive oil and is fit for human consumption. It can be used in making food.
